This is seriously one of those recipes that is so delicious that you will not believe how easy it is to make. One of our church members used to make the sopapilla cheesecake pies and I would look for it at every event. Sadly, they moved and I went into a bit of a mourning period until I found a recipe online that sounded similar to how they made it. I tried it…. and, HALLELUJAH, it tasted just the same. Just a quick note, it took me forever to find the Mexican Vanilla extract and I really don’t think there is a huge difference between it and the regular vanilla extract. I finally found it at Walmart of all places, but I couldn’t find it at any regular grocery store. My personal opinion is that honey is completely unnecessary; they are decadent without it. I hope you guys love them as much as I do!
